Quick, Healthy Pantry Recipes to Make During Social Distancing

With more time at home because of COVID-19, now is the perfect time to use those food items you’ve be storing in your pantry, fridge and freezer. It is also a great time to cook and try out some new dishes.

Check out these quick, healthy recipes that include many pantry staples. Try making them with your kids for a fun family activity.

Turkey Taco Skillet

1 tablespoon cooking oil
1 pound ground turkey
1 yellow onion
1 packet of taco seasoning
1 can diced tomatoes with green chilies
1 can black beans
1 cup frozen corn

In a large skillet, add in the oil and ground turkey. Start cooking over a medium heat. As the turkey cooks, dice the onion. Add onion to the skillet and cook until soft. Add in taco seasoning. Cook and stir for 1 to 2 more minutes.

Drain black beans, then add them to the skillet. Add in diced tomatoes, with juices, and frozen corn too. Continue to heat over a medium heat until skillet mixture is fully cooked. Serve over cooked brown rice, lettuce, or whole wheat tortillas.

Chickpea Chicken

2 tablespoons oil
1/4 teaspoon salt
1/4 teaspoon pepper
4 small chicken legs with skin
1 can chickpeas
16 oz bag of mini sweet peppers
2 tablespoons harissa sauce

Open chickpeas and rinse them. Preheat oven to 425 degrees. On a large baking sheet with rims, toss the chickpeas, 1 tablespoon oil, salt and pepper together.

Mix harissa sauce with 1 tablespoon oil in a small bowl. Rub mixture on chicken and place chicken spaced out on the baking sheet. Put sheet in the oven and cook for 20 to 25 minutes.

Frozen Fruit Cups

4 cups frozen peaches
2 cans mandarin oranges, drained
2 cans pineapple, drained
1 can fruit cocktail, drained
6 bananas
1 small can frozen pineapple-orange juice concentrate, thawed
1/3 cup lemon juice

Thaw the peaches, chop them into large chunks and set aside. Peel the bananas, chop them into large chunks and set aside. In a bowl, combine bananas, peaches, pineapple, fruit cocktail, oranges, lemon juice and juice concentrate. Mix well.

Place mixture in small disposable plastic cups. Cover cups with foil or plastic wrap then freeze until firm. Before serving, remove cups from the freezer for about 1 hour to thaw.
